When you have a little one at home certain food comes very handy while preparing their meal and we all swear by homecooked meal for the family specially for kids as you know what exactly and how fresh is the food.
Quite a few are my favourite and one of them is Vegetable/ chicken stock cubes which i can use anytime for cooking rice, porridge, pasta etc.
My little one is teething again and totally in no mood to eat her regular food we cook at home.She is finding butternut pumpkin very yummy these days, so thought of preparing something out of it only.
Some roasted vegetables with butternut pumpkin makes a perfect puree and sauce. I have not used any exact amount of vegetables here just used whatever was there at home.
Ingredients
Butternut Pumpkin- 1/2 cup(diced)
Peas- Handful
Onion- 1 (diced)
Broccoli- 1/2 cup
Zucchini- 1/2 cup
Carrot- 1/2 cup
Butter - 4 tbsp
Water- 2 cup
Method
- In a pan take butter and let it melt. Add all the vegetables and roast them in butter for around 5-7 minutes .
Add water and let it simmer on the low flame for 15 minutes or alternatively you can steam it for 10-15 minutes or until all the vegetables are soft and cooked.
Just blend for a smoother texture. I couldn't manage to click a very clear picture of the roasted butternut sauce.
